Hugo Hamel Joannette - Manoir du Lac William

Chef - Hugo Joannette

Hugo Hamel Joannette has been a chef since the age of 19. His favourite ingredients are vegetables, fruit, game and other products from the region. A graduate of Quebec's tourisme and hotel industry institute, the ITHQ, this chef also spent three months in a study internship at the hotel school in Namur, Belgium. In the past, he worked for caterer Traiteur Agnus-Dei at the Bronze Café in Inverness, and at the La Claire Fontaine restaurant in Plessisville, which had a 4-diamond rating at the time.

After having studied in Belgium, owned his own restaurant, and been chef in various renowned hotels and restaurants in Belgium, the Caribbean, Nova Scotia, and Quebec, executive chef Christian Wyvekens joined the team at the Hotel Universel in Drummondville.
