He has garnered a unique reputation for the exceptional quality of his kitchen, in which a large crew creates original savoury dishes from the best of Quebec’s terroir products. There is no doubt that when savouring the trendy dishes prepared by Mr. Hubert and his back-of-house staff you’ll discover local flavours!

Karine Paradis - Chef Pub l'Ours Noir

Having completed her culinary studies in 2002 followed by an internship in France, Karine has been developing her career as a chef since 2007. In 2012, she joined the dynamic team at the Cactus Resto-Bar. With this team, she launched the Pub L’Ours Noir in early 2013. She is the driving force behind the menu of this new establishment, highlighting dishes featuring Québec game and fish, among others. Blending her skills in French cuisine with her desire to offer innovative menus bursting with flavour, she has a flair for creating unpretentious dishes while reinventing their presentation, sauces, and flavours, enabling her clientele to (re)discover game, giblets, fish, and other gourmet dishes.
